Soak Rice Noodles, Don’t Boil Them, July 26, 2014

I love Lotus products. I tried soaking these overnight in cold water the way I was taught to do with rice noodles by a Philipino friend and they came out great. Much much better than trying to boil them. Now I am ready to use them today. They can be fried or added to soup or whatever. But I was taught that if you want small rice noodles to not turn into glue then soak in cold water.

Their rice ramen used to be a wonderful product – I heartily second the previous reviews based on the companies old formula. It now basically turns to rubbery, gooey stuff that is very unappetizing. Several weeks ago, we bought three packages of their millet and brown rice. All three were terrible, so we contacted the company, and they promptly sent us one replacement package, assuring us that they’d had no other complaints. That package was wonderful, like their old formula. We just bought another two packages, and the first one we tried did exactly what the ones we bought before did. The cake just sits there and will not break up, even with prodding and pulling . It turns into a thicker, stickier noodle than the old formula, and you end up not able to finish the single serving and throwing it away.
Please return to your old recipe – you had a winner.

Easy to make. Very tasty. Kids seem to like the black noodles. Note that they must be cooked – this isn’t instant ramen.
