  • Mix bag with 25-lbs. of meat. You can use 25 lbs. of lean pork (boneless pork shoulder butts will work if you can’t purchase 80/20 pork trim from a butcher shop). Or you can use 22 lbs. of lean pork and 3 lbs. of lean beef. Empty entire bag of seasoning into the 25 lbs. of meat and mix thoroughly (it works best if you cut the meat into small chunks first). Then stuff the sausage into natural hog casings for links. Or you can package the sausage in 1 lb. bulk freezer bags.
  • Breakdown for less than a 25 lb. batch – 3 Tablespoons of seasoning per 5 lbs. of meat. Can be used when making deer breakfast sausage. Our recipe is to use 50% (12.5 lbs.)deer with 50% (12.5 lbs.)lean pork and use 1 – 8 oz. Bag of Leggs #10 Seasoning.

    Aaa–maaa–za–zaing!! Okay this is the spice blend that my grandparents used when they butchered hogs and made their own sausage to sell in their little country store. Its awesome. We have been using it for years from everything to chicken to pork its just so tasty. I keep mine in a mason jar and just sprinkle it on my pork chops 20 minutes before I grill. The spice just brings out the flavor of the pork so well and it doesn’t take a lot for grilled porkchops or even chicken breast or chicken thighs baked or grilled. It’s delicious. I saw one or 2 ratings about how it was too salty. In all the years I have been using this and im just gonna say im over 40, I have never once had a batch that was too salty. So either they got a rare messed up batch or they salt-a-meter is off LOL. The flavoring does not have a ton of salt in it. Our family loves it and uses it all the time. So glad Amazon is carrying this now!!

    I have been using this product for almost a year ! …..now I never buy any breakfast sausage anywhere .
    A bag will last a long time…..and you are having fun making your own sausage ….
    Look how easy : buy 1 lb of any meat .. Ground lean pork,lamb , chicken or whatever your love in ground meat …add 1 tablespoon of the mix (mix well)….and you have tasty sausage ..minus the fats !
    I do suggest to give it at least an hour for the flavors to blend in….and avoid cooking the patties at high heat …..remember if you buy lean meat ,you do not have grease pouring out to fry it .

    This is the ultimate and only seasoning mix to make authentic Southern-style breakfast sausage, by far superior to anything else out there. In the case of almost every local butcher through the south who sells tons of sausage made with his “secret recipe,” this Legg’s seasoning IS the secret recipe. As for the couple of folks with no taste buds who complained about it being too salty, I have no idea where they get that,they just have no idea what real sausage actually tastes like, I guess.I have never noticed any saltiness at all to it if you use the proper amount of seasoning. I grew up in the Smoky Mountains, and this was the seasoning that both my grandfathers and almost everyone else around here used to make sausage at hog-killing time, and it’s the only store-bought mix that I will use. I also use this for making venison and wild hog sausage, works great.
