   I made some pickled peppers recently with red onions and jalapenos. The jar that went directly in the fridge after pouring the brine over it came out incredibly crispy.
   The jars that were processed weren’t as crispy, but they still are crisper than normal processed peppers. I’m very happy with the results.
   It only takes a tiny amount per jar to work well.

   I have been canning for years and recently have seen recipes calling for this product, I was unsure at first about adding it but to my surprise it does what is says. My pickles this year were more crisp than the years without it, still not as crunchy as a cold pack refrigerator style, but for hot water canning pickle recipes, it does a great job. I will be sure to use it every year from now on. It also worked great for keeping my pickled zucchini, beans and peppers more crisp than usual, just follow the same directions.

   This thing does 100 quarts, which is a lot of canned goods, probably more than all but the most extreme canners will do in a year.

   It’s cheap, it’s effective, and it’s almost mandatory for perfectly pickled goods.
