I spent some time reading reviews and studying blog reports about the device (a wooden box with a blade like a carpenter’s plane, essentially =鉋) used for shaving (not ‘sharpening’) katsuo-bushi. The price for this one (the only one on amazon u.s a. far as I saw) seemed extravagant — there are others out there for much less and shippable at no cost from Japan — but it appears that the price depends largely on the quality of the steel used for the blade (& thus how often it needs sharpening). Main incentive for buying this item is that I make miso-shiru 5 or 6 times / week; adding up the cost of those little plastic packets of katsuo-bushi shavings (about $5.00 / week?) and comparing that with what it costs to shave your own from a block of dried katsuobushi (miraculously enough also available from amazon) the appliance will pay for itself within a couple of months. And the flavors of the shavings are a lot more intense.
