    Farro comes in perlato (pearled), semi-perlato (semi-pearled) and whole. Whole Farro has the bran intact so it has more nutrients than semi or completely pearled Farro. This is pearled in organic form so nutrients are pearled/removed so it will cook faster.

    Freekeh cooks in less than 15 minutes but Whole Farro in 40 minutes and Pearled in fifteen minutes, I do a lot of unconventional cooking. I make dishes with Farro in the same manner that I cook with quinoa and Freekeh, only the cooking time differs. I place Farro and different beans that I soaked in wine for 24 hours in a pot, add water, tomato paste, carrots, corn and turn up the heat. In the end I add spinach. Stewing tomatoes for a half hour increases the cancer fighting lycopene content by 35 percent. Cooking also unlocks another nutrient, beta-carotene, in corn and carrots since heat breaks down the fibrous cell walls, releasing more of these antioxidants. The same goes for spinach but then need to get vitamin C from something else since that is the first vitamin which is depleted with heat. I sauté lots of onion separately then in ten minutes I add paprika, cumin, dill weed, gram marsala, crushed red pepper, turmeric, many other spices and lots of crushed Christopher Ranch garlic 2 x 2 Pound Fresh Garlic USA California Heirloom Monviso Gilroy Finest (4 Pounds Total) mix it well and add to the pot of Freekeh, mix and let it sit without heat for five minutes. Delicious, delicious, delicious. Sometimes I even add delicious organic red lentils which cook in few minutes as well, anything that cooks in 15 minutes. Left overs are even more delicious the next day. I add delicious smoked herrings to the left overs for lunch and it tastes of this world with lots of lemon juice, Tabasco and sumac.

    Farro is Italian. Specifically, farro is the Italian word for ancient grains brought by denizens of the Fertile Crescent to the region that is now Italy. Bulgur and farro are both whole grains that offer substantial nutritional benefits. The main difference between the two is textural. Farro is the Italian word for emmer, an heirloom grain botanically related to wheat. The whole, intact grain is minimally processed, so cooked farro is dense, chewy and filling, similar to wheat berries. Bulgur, made from cracked, precooked wheat, is light and fluffy. Farro is more nutritionally dense, while bulgur is higher in fiber and allows for larger servings.

    Whole grain foods may not contain supplemental micronutrients, as refined grains often do. If you eat large amounts of unprocessed whole grains, it’s wise to increase food items with more folic acid nutrients. It’s delicious with pasta sauce or tossed with sautéed mushrooms, onions and garlic. Cup for cup, quinoa has more of nearly every macro/micro nutrients except dietary fiber and quinoa’s protein is complete. No wonder quinoa is the beef for vegans since vegans can get all other nutrients from other foods but not protein since it is in animal form. But if on a healthy diet of legumes, seeds, nuts, fruits and vegetables then fiber is the last thing on anyone’s menu since after all chia tops it all when it comes to fiber.

    Farro is a better tasting than Freekeh which is bulgur. In comparison with quinoa, I get complete protein out of quinoa and like the taste more and cooks quick where neither farro or freekeh offer complete protein due to missing amino acids. Anson Mills has great farro as well. With farro, I can not even get the Nutrition Facts provided by USDA since it is such a rare grain in US. Farro, freekeh, bulgur are all good addition to anyone’s diet especially for folate.

    The new old grain we found and now cannot do without. This nutty and substantial grain can substatute for brown rice, lentels and many other grains. I use it in my rice maker on brown rice settings and it works great. It is easy to cook and you can add flavors easily as the grain absorbes them easily. For example my wife loves Basil Pesto flavored Farro. She actually begs me to make it from time to time.
