A Flour Alternative, Non-GMO, Allergen-Free – Best for Coating & Thickening (See Photo),
One of us is pretty much gluten-intolerant, so we have extensive experience with wheat-substitute flours. There’s a reason for going gluten-free, and a trade-off. Most substitute flours just don’t make bread, for example, as well as traditional wheat flour — and that’s to be expected. So we did not expect This “all purpose flour” to be exactly like wheat flour — and that’s a good thing, because it isn’t.
What it does do well: it’s excellent as a base for dusting fish and poultry for frying. We would say, it’s more akin to rice flour than many other types. It served well as the basis for frying wild-caught (Trader Joe) purchased sockeye salmon (see photo). We sprinkled some on a plate, added good quality mined salt, and organic spices, chopped, from our garden. We fried it in coconut oil with a little butter (both organic) — delicious! It also did well in other recipes, for thickening sauces. In our opinion, those who said it didn’t taste good must have been doing something different!
As a baking flour, however, this sorghum-based flour didn’t do as well. It does create a grainier, more crumbly result. It does better making cake-like recipes than bread — which really benefits from wheat’s gluten properties.
But then again, those of us who are using wheat substitute flours know that they do not perform the same as wheat. We’re looking for the best alternative. IF you use this Bona Dea flour for what it’s good for, and add other organic non-wheat flours to your pantry, you’ll learn which ones work best for what.
Another thing we appreciate about this company is its commitment to non-GMO — bravo! It’s also free of the top 8 allergens — wheat of course, milk, eggs, fish, shellfish, tree nuts, peanuts and soy. It’s made in an allergen-free facility, and the company has a high commitment to transparency and excellence. Kudos for all that, and we know it’s not easy in a world as loaded with chemical riddled, herbicide and pesticide-laden so-called “food.”
