Freekeh (pronounced free-ka) is a new super food and ingredient. It is ‘roasted green grains.’ freekeh is a process and not the name of a grain variety. Similar to wheat berry in size and texture freekeh is 100% natural. The grains are harvested while still soft, young and green, then parched, roasted and dried. The process captures and more importantly retains the grains at the state of peak taste and nutrition. Green grains are very different in properties to mature grains. The entire process

I have purchased Freekeh many times before, and it has always been shorter grain. I cannot find it at my local supermarket or Costco anymore (I don’t know why) so I ordered it from Yankee Traders. I like Freekeh because it is a great healthy substitute for rice, but has the same consistency, so when I make recipes that call for rice (like Jambalaya), I can substitute the Freekeh. I have used this in several recipes now, and I am not really happy with the consistency. I think that the long grains make it difficult to soften, and as such my recipes came out crunchy. I used the rice cooker (which is how I always cook my Quinoa and Freekeh), and I noted that this Freekeh takes a lot longer to cook. I don’t dislike it; I just don’t want it to be crunchy. Overall, not my favorite, but a lot better than rice.

This is pretty good- but we usually buy the cracked freekeh in our household.. I didn’t like the whole grain as much simply because it lacks a little texture for my tastes and that it takes longer to cook, but it still has very nice flavor and I prefer this over Quinoa.. trying to keep away from pastas and rice can be rough, but freekeh is awesome to replace those with- get the carbs you crave while taking in much more protein and fiber.. If you’re new to Freekeh, I suggest trying the cracked version first as it is much like brown rice with more texture.. then work up to whole grain. Very yummy stuff. Try it with blackbeans! :) Excellent quality!

I have found that I can use freekeh in salads, as a replacement for rice or bulgar, as a hot side or hot cereal, and in baked goods. Love the nutty flavor and knowing that it is highly nutritious.
